I heard there are programs you can run to mimic vista to run certain programs, what are they and are they easy to use? My main concern is that I would be getting into something that would be a little to complicated and hands on for my caveman computer knowledge.. Any info or thoughts would much appreciated...

Ubuntu is easy to use but it is not vista.
So there will be changes. But its not that hard. I am a nOOb myself and i am doing pretty good with linux now.
You do recive automatic updates. They are free just like the ubuntu.
To find what programes can replace windows countreparts go to osalt.com
There are loads of them
It is very easy to get something done in linux. If you have any questions post it on ubuntuforum after googling for it

I thoroughly recommend Linux Mint 6 Main Edition which is Ubuntu based. Its easy to install and easy to use plus it comes with much of the software you are likely to need preinstalled.
You would be best off RUNNING IT LIVE so you can get the feel of things.

Once you have got the feel of things you may wish to consider an installation
The Perfect Desktop - Linux Mint 6 (Felicia)

You download the ISO. image of Linux Mint 6 then you need to create a Bootable CD from the ISO. This can easily be done using Nero Burning ROM or similar software. Linux Mint can also be run straight from the LiveCD you have created without touching your Hard Drive.
Remember you can RUN IT LIVE !
